Red yeast rice, or monascus purpureus has been used as a dietary staple in many Asian countries and it is currently used as a nutritional supplement taken to manage cholesterollevels. Red yeast rice is obtained through fermentation of Non-Gmo rice with monascus purpureus which is made from high-quality& non-genetically modified rice with natural solid-liquid fermentation and state out of a natural lovastatin (Monacolin K),have a good stability and good effects on lowering cholesterol.Monascus red extract is dark red powder, slightly odor, soluble in neutral and alkaline solution. It is easily to be soluable in ethanol, propylene glycol, glycerol and their solution and the solubility will be reduced under PH4.0 medium environment.The solution appear bright red when the solution layer is thin and dark brown with fluorescent when the solution layer is thick .Strong stability under pH environment, not be affected by metal ions (Ca 2 +, Mg 2 +, Fe 2 +, Cu 2 +) and 0.1% hydrogen peroxide, vitamin C and sodium sulfite oxidation. Good heat resistance and acid resistance.The alcohol solution is stable under UV light, but long-term sunshine can make it fade. The excellent coloring adhesion on protein, which is not easy to be fade.
